Coconut and Chia Bircher

A friend asked me how she could start her day healthily but wanted something quick instead of her usual toast and jam. I said bring on the bircher!

The whole concept is that you put it together the night before so the coconut milk has time to soak into the oats, seeds and nuts, making for a thirst quenching and delicious start to the day. The hardest thing you have to do in the morning is open the fridge door and there it is, sitting pretty. It's all the better too for letting the flavours develop overnight. Soaking the oats and nuts also deactivates phytic acid, which can stop you taking in nutrients.

You can make this with your own choice of milk - grated apple, cinnamon and raisins is a classic, while adding protein and healthy fats by using chia seeds, nuts and coconut milk will keep your blood sugar more regulated, giving you more energy for longer.

I’m all for the second option at the moment, so this one includes coconut, chia, berries, walnuts and pumpkin seeds. You could also try raspberry and raw cacao to add magnesium and potassium which will give you a big hit of bitter sweet taste in every spoon.

Coconut and chia bircher (serves 1)
Ingredients:
4tbsp whole oats
1 tbsp chia seeds
1 cup coconut milk (Tesco does a good one which isn’t overly sweet)
Handful walnuts, cashews and pumpkin seeds
Handful desiccated coconut
Handful fresh raspberries

Method:
1.  Combine all the ingredients in a serving bowl, stir thoroughly and leave in the fridge overnight.
2. Take out of fridge in the morning, stir and add a little water if needed.
