Mum's Summer berry masterclass

We get the sweetest selection of plump summer berries at this time of year. I love to raid mum's garden (and jam cupboard) for black and red currants, strawberries and ruby red raspberries.
As a post war child (who looks impressively young for her years due to genes and yoga), mum also has an uncanny ability to preserve whatever excess fruit there might be.

A stacked 'to go' dessert of strawberry, blackcurrant and mint smoothie with Greek yoghurt and home made granola makes for a pretty pack up too.

Strawberry, blackcurrant and mint smoothie (enough for one plus some left over for your layered dessert)
2 handfuls strawberries
1 handful fresh blackcurrants (or blueberries would work too)
handful fresh mint leaves
1/2 kiwi
1/4 cup water

Home made nutty granola
2 oz rolled oats
2 tbsp vegetable oil or coconut oil (which doesn't burn at oven temp)
Whole brazil nuts and walnuts
Pumpkin seeds
1tbsp honey

1. Blitz the smoothie mix in a blender until smooth.
2. Mix the granola ingredients together, lay out on a baking tray and cook for 5-10 mins in a medium oven or until the oats turn golden.
3. For a simple smoothie, serve with a straw in a jam jar. For the layered dessert, layer the smoothie, then some greek yoghurt, then the granola and extra blackcurrants on top.
